The almogrote is a mojo with the texture of a pâté and comes from the remote history of the island of La Gomera and combines two local ingredients: aged cured goat's cheese (typical of the island) and mojo picón. The key is the texture, which should be neither too solid nor too gelatinous, and the colour, which should be orange.
The mojos are the most famous sauces of the islands to accompany any typical dish of the islands, the difference between the two mojos lies in the time, as the red mojo has vinegar so it requires more dedication, it is also spicy, although in Masapé they opt for a medium point that pleases all palates.
