The Mojo Palmero is a sauce that has as main ingredient the peppers that, after a process of extraction of the water present in this vegetable (drying), a later rehydrated and the mixture with oil, garlic, vinegar, cumin and salt is a perfect accompaniment for meats, fish and potatoes in all its forms, without discarding many other applications that can be given in the Canarian cuisine and, why not, in the international cuisine.
