Smoked Canarian cheese is a white cheese made from a mixture of cow and goat's milk (70% cow's milk), which has been left to mature for between 6 and 10 months, and which has been smoked in the traditional Gran Canarian way (this consisted of leaving the cheese on a reed stand on top of the cooker while it matured so that the smoke from the food would impregnate it), which gives it a slight citrus fruit smell. From a cut, you can appreciate its intense white colour due to the combination of raw milk.
