Mojos and almogrote are three Canarian sauces with great prestige, there is no typical dish of the islands that does not have them, as their great virtue is their versatility to be used in different dishes.
Mojo Rojo: Water, sunflower oil, red pepper, wine vinegar (contains sulphites), modified starch, ground garlic, salt, sweet paprika, ground cumin, thickener: xanthan gum, natural flavouring, colouring: paprika extract, paprika extract.
It should be noted that there are two types of red mojo: the spicy red mojo, in which case it has hot paprika extract; and the mild red mojo, which, as its name suggests, has normal paprika extract.
Mojo Verde: water, sunflower oil, green pepper, wine vinegar (contains sulphites), modified starch, ground garlic, salt, ground cumin, fresh parsley, thickener: xanthan gum; dehydrated parsley, natural flavouring, colouring: chlorophyll and chlorophyllin copper complexes; paprika extract.
It should be noted that there are two types of green mojo: spicy green mojo, in which case it contains hot paprika extract; and mild green mojo, which, as its name suggests, contains normal paprika extract.
Almogrote: cured fatty cheese (milk), sunflower oil, granulated garlic, capsicum (Capsicum annuum), antioxidant: citric acid, preservative: potassium sorbate, natural flavouring, colouring agent: paprika extract, paprika extract.
