In its elaboration we respect some old practices, the manual harvest, selected from the best clusters at the optimum ripeness, and then a light pressing, with this we obtain a fresh and light wine to which the Méthode Traditionnelle Champenoise is applied, which includes a period of 18 months of ageing on lees, after which the sparkling wine is bottled. It has a very subtle rosé colour, accompanied by an aroma of red fruits with hints of fig leaves. On the palate it is light and fresh, reminiscent of red fruits, and as a result of its ageing on the lees one can notice soft hints of pastry.
