The grapes are harvested by hand and the grapes are selected from the best bunches at their optimum ripeness. The wine is fermented in French oak barrels and then aged on fine lees in stainless steel for four months. Straw yellow in colour, it is clean and bright, and has a complex fruity aroma (guava, citrus, etc...) with hints of honey and white flowers (jasmine). In the mouth it is oily and has a fresh acidity, with a great fruity finish and an elegant bitter aftertaste. It is considered a balanced and very persistent wine. El Yanes Malvasía has the D.O. Canary Islands. It is made in Tacoronte (Tenerife) with grapes from the Finca San Juan estate in the same municipality.
